In Italy, leaf celery is one of the herbs (odorini) that are added to the pan at the beginning of cooking a sauce, soup, or main dish. French, Chinese, and Thai cooks all use leaf celery as a flavoring in food. Grab a stem or snip a few leaves at a time to chop into food like parsley.
