Slow bolting greens with electric purple veining on a bright green background. Salad size leaves are textured and colorful, with very sweet mustard flavor, and a pinch of heat. Wide midribs develop as it matures, making a great crunchy stir-fry vegetable. Fall favorite, hardy well into winter. Last mustard to bolt in spring. Outstanding new salad/cooking green from Frank Morton, Dragon is a cross between the mild Horned Mustard and the very sweet/hot Miike Giant, selected for rich, sweet, slightly hot flavor. Photos by Jessica Wallister and Karen Morton. OSSI open-source variety. 28 days baby, 48 full-size. 100 seeds

The Open Source Seed Initiative exists so that breeders who originate new varieties can protect them from exploitation and patenting by corporations. It means that the breeder has freely given up patent rights in order to keep the variety in the public domain forever. The OSSI pledge reads: "You have the freedom to use these OSSI-pledged seeds in any way you choose. In return, you pledge not to restrict others' use of these seeds or their derivatives, by patents or other means, and to include this pledge in any transfer of these seeds or their derivatives."
