A favorite with our family for many years, this pepper is both hot--about like a serrano--and sweet. The sweet delicious flavor makes it perfect for pasta sauce, where it really blends the flavors and brings out the fruitiness of tomatoes. I use it for spicy salt--just slice the peppers into salt and let it infuse--for spicy vinegar, and in soups and sauces. Melts into cooked dishes and disperses its flavor, so you don't bite into a surprise. Dries easily, and makes beautiful ristras (pepper strings). We also use them on the Christmas tree--we've seen them up to 13" long. An Italian heirloom brought from Calabria by the Sesito family.
