Early Korean Hot Pepper
Incredibly high-yielding, easy-to-grow hot pepper that ripens bright red even in cooler summers and short-season areas. Fruit are similar to a cayenne in shape but a little shorter and wider, and not quite as hot. They dry easily and its a good thing because they really pump out the peppers, even in cool summers and tough conditions. With their big yields, early maturity, and thin walls, these dry easily for pepper flakes, powder, or ristras (dried pepper strings.). I have been using these to make homemade hot sauce for a few years now. Perfect for Kim-chee, with intense red pigment that gives the product a beautiful color, without incinerating the eater. Wonderful for flavoring all kinds of products. I use these as my standard hot pepper for hot sauce, kim-chee, and all kinds of cooked dishes.
