Early Korean Hot Pepper
Incredibly high-yielding hot pepper that ripens bright red even in cooler summers and short-season areas. Fruit are similar to a cayenne in shape but a little shorter and wider, and not quite as hot. They dry easily and its a good thing because they really pump out the peppers, even in cool summers and tough conditions. These are perfect for kim-chee and hot sauce, or for ristras (dried pepper strings.) I have been using these to make homemade hot sauce for a few years now. Perfect for Kim-chee, with intense red pigment that gives the product a beautiful color, without incinerating the eater. Wonderful for flavoring all kinds of products. I use these as my standard hot pepper for hot sauce, kim-chee, and all kinds of cooked dishes.
