Korean Hot Pepper
An early, high-yielding hot pepper that ripens bright red even in cooler summers and short-season areas. Fruit are similar to a cayenne in shape but a little shorter and wider, and not quite as hot. They dry easily and its a good thing because they really pump out the peppers, even in cool summers and tough conditions. These are perfect for kim-chee and hot sauce, or for ristras (dried pepper strings.) You can use enough peppers to get a good red color without making something so hot nobody can eat it. I have been using these to make homemade hot sauce for a few years now. Perfect for Kim-chee, with intense red pigment that gives the product a beautiful color, without incinerating the eater.
