A spring treat, chervil is used fresh in salads, strewn on cooked dishes, and as part of a fines herbes bouquet in cooking. The flavor is like a milder, sweeter, more tender parsley with slight overtones of anise. Very popular in salad mix to give a sweet, fresh quality, and wonderful in all egg dishes. I like to have it in the garden among the vegetables--it likes shade, anyway, so plant it right under them. Then when stretches up and blooms, you get lots and lots of edible Queen-Anne's Lace-type flowers for salad, garnish, and attracting beneficial insects and butterflies. In fact, it is a great idea to plant it in the fall for early-spring bloom, right when you really want nectar for early butterflies and beneficials. 60 seeds
