Mild, juicy, and fast-growing, this is an easy and rewarding vegetable for either spring or fall. Lettuce-y texture and mild flavor are terrific for salad. Very quick-cooking, for weeknight meals. Since it is basically a leafy, non-heading Nappa cabbage, it can be picked leaf by leaf for use raw or cooked. Everyone who sees the eye-catching lime green color wants to try it--beautiful with a dark green and a red lettuce. Then, at the end of the season, when you want the bed for something else, it is also a perfect candidate for fermenting into kim-chee or freezing for soup.
