Meaty, versatile and delicious pepper with a bit of heat. Used fresh and green, it is the quintessential "chile relleno" pepper for stuffing, frying, and salsa. The mature dried peppers are a lovely dark brick red, prized for chili powder and enchiladas. Big sturdy plants bear lots of peppers. So nice to have a pepper that is piquant but not overly hot so it can be an ingredient and not just a condiment. (Heat is variable, and gets hotter as it matures. Perfect for chiles rellenos when deep green.)
