Back! Unique and delicate flavor completely different from beans and peas. Lady Peas are a Southern specialty with legendary mild, sweet flavor. In the past, they were very hard to grow outside the South. Now, we can all grow them, thanks to Carol Deppe. She has bred a Southern Pea she can grow in her cool Oregon garden, with big, early yields and wonderful flavor. It's iron constitution gives it heat-tolerance as well, so it can grow in the north, south, and in between.
Carol tells me that she even uses these like rice as a mild tasting staple with other foods. The plants attract hordes of pollinators, and the long pods hold a lot of little peas that shell out very easily. And as if that isn't enough, they also cook quickly without pre-soaking.
