Savoy cabbage is a little-known treasure for gardeners: the leaves are thinner, crinkled, and get quite sweet after frost, so they make a great winter salad, and cook quickly. Try them sauted in butter, steamed, stir-fried, etc. The outer leaves make great wraps for any filling you can think of, and are traditional for cabbage rolls. The crinkled texture gives them great cold-hardiness, and they are a traditional staple of the winter garden in Europe. Think Lacinato kale with larger, more tender leaves and milder flavor. This one is an English heirloom that can be overwintered in zones 6 or 7 to 9. Takes several months to head up, then lasts a long time without splitting, so you can overwinter it in the garden. ~120 days
