I have tried many different butternut types, new and old, and this is my favorite. The flavor is sweet but also rich, clean, and full-bodied in perfect balance. Short-season adaptation means you get squash earlier than most other butternuts, so they can be dry and safe when fall rains arrive. And I love the shape, which I consider the easiest in the kitchen. The meaty neck is easy to cut, easy to peel with a typical vegetable peeler (if desired--the skins soften in cooking) and easy to slice. All the seeds are in the small bulbed end, which makes 2 perfect little bowls for stuffing. This delicious heirloom squash traces its history all the way back to the Iroquois tribe.
