I never knew these were edible until recently. Fancy named varieties of hosta are a staple in ornamental gardens, because they thrive in shade and has such beautiful leaves. It turns out that the young shoots and leaves are used as greens--another way to fill the early-spring "hunger gap" with a perennial that can produce edible greens before seeds have a chance to germinate and grow to usable size.
