Methi, Fenugreek
Culinary herb, traditional medicinal, and nitrogen-fixing cover crop, this unique plant has many uses. The seeds are a main ingredient of curry blends, medicinal teas, and--strangely enough--"maple" flavoring in syrups and pastries. The leaves are used fresh in many dishes from India and Southeast Asia. And the seeds are used for fresh sprouts and microgreens as well. The light blue flowers are a pleasant bonus.
Fenugreek likes cool moist conditions and mild rainy weather. But it cannot stand any frost, so it should be sown at the last frost date, if possible. The photo shows the size at harvest. It's cut at 6 to 8 inches, and its unique bittersweet flavor adds freshness and piquancy to breads, curries, and chutneys.
