Charleston Wakefield Cabbage
A fast-growing, heat-resistant cabbage from South Carolina with a pointed or heart shape that's rare in American markets. Most are adapted to winter growing, requiring cool weather. This southern heirloom is more widely adapted for spring and summer growing than most cabbages. I chose it because of it's resistance to heat and bolting, and it's great culinary qualities.
Every internet cooking channel I've seen lately is calling 2026 "The year of the cabbage"--and these heart-shaped cabbages are getting the most buzz of all. Sometimes called Hispi or Sweetheart cabbages, they are particularly treasured for roasting. Their loose structure, tender texture, and sweet flavor makes them particularly suitable for roasting in wedges, leaving the edges crispy and slightly charred, with tender melting centers. They are often served with a sauce and a sprinkle of something crunchy and flavorful, like nuts or spicy breadcrumbs.
