My favorite sweet corn. Deep, creamy kernels are like a mouthful of heaven in late summer. Rich,sweet flavor, with large ears and big, deep kernels, Sweeter than most open-pollinated corns, with great flavor and texture. And they are substantial enough to cut off the cob for salsa, chowder, and so on. Ears fill all the way to the tip, even for people who have had trouble getting well-filled ears. Productive, with 2 ears on each plant. Ears are 7-8” long and mostly 16-18 rows around. Could easily be mistaken for the famous "Silver Queen", but is not a hybrid. A wonderful new OSSI open-source variety from Jonathan Spero. In very short supply this year, due to Mr Spero's untimely death last spring. The supersweet corns in the supermarket are hybrids. Open-pollinated "Heirloom" corns have a more complex flavor, not so sugary, and a shorter shelf life. For the best eating, watch the ears carefully. When the juice in the kernels is clear, the corn is not ready. When it gets milky, the corn is ready to eat. Pick while juice is milky, not yet pasty. Cook as fast as you can after picking. Yum.
