What a perfect name for this colorful bok choy mix. Absolutely vibrant shades of magenta violet, purple, and rose pink color the succulent petioles, sometimes the leaf veins, sometimes the entire leaf. The color is bright and eye-catching, the flavor is mild and juicy, and it makes a terrific addition to salad mix, sandwiches, or light cooking. A little ruffle to the leaf edges gives it a fancy look, and gives a good texture in salad. Use the flower stems like a milder, juicier broccoli. Color develops most fully in cool weather--fall plantings are great for bright colors and winter hardiness down to about 20 degrees.
