Our spinach varieties are chosen primarily for great flavor. It you have only tasted the hybrid commercial varieties, you will be surprised at the sweet, mild flavor and lack of metallic "edge."  You can enhance both flavor and vigor of your spinach by adding a calcium source to your soil. Spinach likes a high pH--6.5 to 7. Like lettuce and brassicas, spinach enjoys a situation with high fertility, relatively high pH, lots of organic matter, and relatively cool conditions. It's place of origin is Persia, modern-day Iran.
