Renowned for its great flavor and texture in polenta, corn bread and muffins, and for it's high protein content. An heirloom from the Valsagana valley in the mountainous part of Tuscany, and well-adapted to growing in all but the most extreme climates. Corn arrived in Italy from the Americas in the 1500's, along with beans and tomatoes. It quickly replaced the millet that had been used for polenta. Corn is higher-yielding, better-flavored, and shielded from birds by the husk. So for the past several centuries, Italian farmers have been selecting corn just as they have been selecting tomatoes.
