We have searched out non-hybrid, non-GMO corns, which have become very hard to find. Non-hybrid sweet corn is delicious and satisfying, with rich, full flavor. It is not as sugary-sweet as hybrid supersweet corns like those in the supermarket. For optimum flavor, pick at peak ripeness (juice in the kernels is milky but thin) and cook immediately, as the sugars turn to starch quickly.
Flint and flour corns are an easy way to grow a staple food that can be used all year. Note that popcorn is also a flint corn and makes good cornmeal or polenta. It is also more resistant to crossing and genetic pollution than other corns.
