Salad is a big basket, and pretty much anything can go in there. This page is about greens--leaves that either make the base of the salad, like lettuce and tatsoi, or provide a seasonal leafy herb, like chervil and cilantro. To keep it a curated selection, and not just a grab bag,  there are no chunky things like radishes or peas here,  just the 3 kales I consider particularly good raw and one or two spicy mustards. Nothing rough or hairy is here--it has to be not only edible raw, but enjoyable.
